2. AVOCADO CARBONARO
Avocado Carbonaro is an easy to make vegetarian meal that can be eaten alone or combined with another meal as a side. This meal has tons of flavor and is super easy to cook. To make this meal you will need 1 medium Avocado, 2 cloves garlic (or pinch of asafoetida), zest and juice of 1/2 lemon, 1/8 cup parsley, 1/3 cup walnuts, 1/8 cup basil, 2 tablespoons extra virgin olive oil, 75 oz pasta (this depends on how many servings you wish to prepare). Start by cooking the pasta and mix in lemon juice, garlic in a food processor and olive oil. After you have blended it, add the remaining ingredients and process until smooth. Place sauce over the freshly cooked pasta and serve right away while it’s warm.
